I think it's cause they realize that in the general dating pool they (jewish girls) are not very desirable. But if you narrow the field to jews-only... well, then you're single because you haven't met a "nice jewish boy" yet- not because you're 4 foot tall, annoying as fuck and have a nose that cub scouts could camp under.
