I have to go to work in a minute, so I'll post more in depth on this later today.
1. No Country for Old Men is generally thought of as McCarthy's worst book. Of the 5 books I've read of his I agree. Great movie, sub-par book (at least by McCarthy standards).
2. All the Pretty Horses is a really good book, but if you're already read the plot then you'd be reading it more for the actual writing, and if that's the case I'd suggest Blood Meridian.
3. I'm not expecting The Road to stay very true to the book for reasons you already mentioned.
